Effect of electric field on mass transfer during oleuropein extraction

The use of alternative extraction methods has increased since conventional have disadvantages like long processing time and limited yield. It is known that the yield enhanced, shortened by electric field. However, mathematical characterization electrically assisted processes needed for a better understanding improvement extraction. In this study, effects moderate field (MEF-E) parameters (frequencies 1, 1000, 2000 Hz, wave types sine square) on yield, cell disintegration index (Zc), microstructure, mass transfer coefficient (Deff) were investigated to examine characteristics oleuropein from olive leaves. Correlation analysis was performed investigate relations between Zc, Deff, changes in cross section areas palisade cells. frequency significantly affected microstructural changes, Deff values (p < 0.05).
